 This easy creamy loaded Potato Soup recipe is comfort food delicious. A simple, 30-minute recipe for the most amazing loaded Potato Soup you will ever taste. This Potato Soup is loaded with bacon in a creamy base (without heavy cream).

This homemade potato soup is so easy to make and it has a delicious creamy base. This soup uses ingredients that you probably already have in your pantry. So perfect when you need a quick dinner with hardly any effort.

What Ingredients go into Potato Soup?

  • Meat – We used bacon but honestly cubed ham would be amazing.
  • Potatoes – We used Russet but you can actually use Russet, Idaho or Yukon. NOTE: If you’re using Yukon potatoes, the skin can be left on. Try mixing it up and add some sweet potatoes or red potatoes!
  • Veggies – Though we only added onion and garlic, you can add cubed carrots, broccoli and celery to the soup.
  • Easy Creamy Base! We didn’t use any heavy whipping cream, instead, we made our own roux to thicken the soup. For the roux, we used butter, flour, broth, and milk.
  • Cheese – We used a mild cheddar but feel free to use whatever cheese you have on hand.

How to Make Creamy Potato Soup:

  1. Place potatoes in a pot, cover with water, season with salt, and cook until tender then drain.
  2. In a separate pan, saute bacon until crispy, remove and set aside, reserving 1 Tbsp bacon grease.
  3. Add onions and butter and sautee until soft. Add garlic, cooking until fragrant.
  4. Whisk in flour, milk, and broth until smooth.
  5. Add drained potatoes, season with salt and pepper, and bring to a soft boil.
  6. Stir in sour cream, cheese, and bacon. Bring to a boil then remove from heat.

Serve the creamy potato soup with your favorite toppings!

    Ingredients

    • 4 large potatoes peeled and cubed
    • 1/2 tsp salt
    • 6 slices bacon (cut into pieces)
    • 4 Tbsp butter
    • 1/2 medium onion (finely chopped)
    • 2 garlic cloves (minced)
    • 1/4 cups all-purpose flour
    • 2 1/2 cups whole milk
    • 2 1/2 cups chicken broth
    • 1 cups shredded cheese (mild or sharp)
    • 3/4 cups sour cream
    • 1 tsp salt
    • 1/4 tsp pepper
    • green onions (garnish optional)
    • chives (garnish optional)
    • fresh parsley (garnish optional)

    Instructions

      1. Place sliced potatoes into a large pot and completely cover with 1" of water. Season with salt and cook 8-10 minutes or until potatoes pierce easily with a fork then drain.
      2. Meanwhile, saute bacon in a large skillet until crispy then transfer to a plate, reserving 1 Tbsp bacon grease in the skillet.
      3. Add butter and chopped onions then sautee until tender. Add garlic and cook another minute until fragrant.
      4. Quickly whisk in the flour. Slowly add milk and broth, whisking constantly then bring to a soft boil.
      5. Add drained potatoes and season soup with salt and pepper or season to taste.
      6. Stir in sour cream, shredded cheddar, and half of your cooked bacon (reserving the rest for serving). Bring to a boil then remove from heat and serve with your favorite toppings.
